These were SUPER, thank u so much, Christine! Brought them to dinner at a gluten and dairy-free friend’s house. They were highly complimented, and every one was eaten.

And I even skipped the chocolate bc he is also diabetic. (The light amount of sugar in the body of the cookie was ok for him.) Someone here suggested that the coconut oil taste overwhelmed the almond, so I used only 2 tbs coconut and 1 tbs grape seed oil, which worked well. Next time I would double the almond extract to a full tsp bc I love an almond cookie and this was not quite as almondy as I’d like. (Then again, I did lose some flavor by skipping the chocolate.)

But those are my own preferences for flavor. Otherwise this recipe was excellent in producing a nice, lightly sweet, chewy cookie.

These were amazing!! I didn’t have coconut oil or almond extract so used olive oil instead and just left out the almond extract. The almond flour packed plenty of almond flavor still! I was able to get 15 cookies out of this and they are perfect bite sized portions. Super delicious.

Hi thanks.for this absolutely delicious recipie which is healthy at the same time. But mine were very soft and chewy. How can we make them crispy n crunchy? Also the coconut taste over powers the almond taste when I dnt put the almond extract.

FAQs

How do you make gluten-free cookies not dry? ›

Use a Binder. Binders like xanthan gum and guar gum provide structure in gluten-free baking to make up for the missing gluten. This prevents cookies from being too crumbly plus it also helps with freshness.

Why do gluten-free cookies fall apart? ›

You need a binding agent in your gluten-free cookies recipe; otherwise, your cookies will fall apart. Some flour blends may already contain a binding agent, so double-check the list of ingredients. If it doesn't, you can add flaxseeds, xanthan gum, or guar gum.

Does almond flour change the texture of cookies? ›

One might think almond flour makes dry and crumbly cookies, but think again and imagine macarons. Macarons are crispy on the outside but soft and chewy on the inside. Almond flour, when used properly in baking cookies, will give cookies a soft and chewy texture. The cookies can be surprisingly moist, too.

What are the almond cookies called? ›

They are a common biscuit in many different cuisines and take many forms. Types of almond biscuits include almond macaroons, Italian amaretti, Spanish almendrados, qurabiya (a shortbread biscuit made with almonds), and Turkish acıbadem kurabiyesi.

Which gluten free flour is best for cookies? ›

Almond flour is a grain-free, protein-rich flour that lends well to cookies, cakes, and more! Almond flour is made from blanched almonds, meaning without skins (as opposed to almond meal, which is made from raw almonds with skins). This is why it has a fluffy, light texture and pale golden color.

What holds gluten-free cookies together? ›

More: Baking with a scale will change your life -- here's why. It might sound scary, but xanthan gum is key for successful gluten-free baking. It helps bind together the ingredients, preventing your cookies from falling to pieces. Be careful to not use too much; no one likes gummy baked goods.

Should you chill gluten free cookie dough before baking? ›

5- Chill your dough well before baking.

But it's a good idea in warm kitchens, if you're working with browned or warmed butter, or if you're rolling the dough. It reduces stickiness of gluten free doughs and also can enhance the flavor, but again, it's not necessary with gfJules Flour or Cookie Mixes.

How do you improve the texture of gluten-free cookies? ›

After adding your dry ingredients, mix the dough for a few minutes (instead of just until combined). This will help the dough develop a bit more structure and get rid of any gritty texture from unincorporated ingredients. After all, you can't develop too much gluten if there's no gluten to begin with.

How to tell when gluten-free cookies are done? ›

Timing is Key

While visual cues like the toothpick test and pressing the top of the cake will still help, the best way to determine if your baked goods are perfectly done is with a timer and oven thermometer. This is because gluten-free treats often look underdone and slightly wet inside after baking.

How much almond flour equals 1 cup all-purpose flour? ›

Can you Substitute Almond Flour for Regular Flour? Almond flour can be substituted for regular flour at a 1:1 ratio. It is important to note that almond flour may require more egg to bind the flour. Check out our almond flour recipe book here for more information on a specific recipe!

What happens when you replace all-purpose flour with almond flour? ›

Almond flour is a little more moist than wheat flour, and doesn't have quite the same binding qualities. You'll do best to substitute 1:1 to begin with, as many recipes respond well to this direct replacement. But be prepared to add more almond flour as you go to compensate for the wetter batter.

What are Elvis cookies? ›

rated 0.0 of 5 stars. Elvis Presley had a knack for making people swoon, and so does the flavor combination in this thick, sturdy cookie. It seems so wrong yet tastes so right: bacon, peanuts, chocolate and banana chips.

What is a Nazareth cookie? ›

The sugar cookie is believed to have originated in the mid-1700s in Nazareth, Pennsylvania. German Protestant settlers created a round, crumbly and buttery cookie that came to be known as the Nazareth cookie. Jumbles are the earliest form of sugar cookies.

Why do Chinese restaurants have almond cookies? ›

Almond cookies symbolize coins and will be sure to bring you good fortune. Gung Hay Fat Choy!

How do you make gluten-free baking not dry? ›

Don't overmix: Overmixing can cause gluten-free baked goods to become tough and dry. Mix your ingredients until just combined and avoid overworking the dough. Doughs and batters tend to gelatinize the gums (xanthan & guar) in flour blends/mixes, so you could end up with a 'slimy' texture if you over do it.

How to keep gluten-free cookies soft after baking? ›

If your cookies are too thin and crispy, use soft butter, do not chill the dough, bake less time and consider raising the temperature of your oven by 25 degrees. You can also substitute brown sugar for granulated sugar (or some proportion thereof) to help bring more softness and chew to your cookies.

How do you increase moisture in gluten-free baking? ›

Honey and agave as a sugar substitute can enhance moisture as well, but be aware that you should cut down slightly on the other liquids you are using in the recipe, as honey and agave are not solid ingredients. Adding an extra egg or oil can also help, but use caution.
