Today I have a delicious homemade dairy free raspberry chocolates recipe to share with you.

This recipe uses coconut oil chocolate which is so easy to make and super quick too - you can literally be eating your own homemade chocolates made completely from scratch less than 20 minutes after you decide to make them!
This chocolate recipeis completelydairy free, gluten free and free from refined sugar, so healthier than standard shop bought chocolate whilst still being delicious.
As Mr Amazing has to avoid dairy, discovering this method of making dairy free chocolate has been especially appreciated by him, but the whole family enjoys these chocolates and they are such a fun easy recipe to make with the kids, they are so impressed at being able to make their own chocolate!
Dairy Free Raspberry Chocolates
Ingredients:
- 100g coconut oil
- 5 tbs cocoa powder
- 2 tbs maple syrup
- 2 tsp vanilla extract
- 100g raspberries
Method:
Measure out the coconut oil and drop into a heat-proof jug or bowl. Pop into the microwave and heat at short 10-15 second intervals, stirring in between,until the oil has completely melted and is clear.
Add the cocoa powder, maple syrup and vanilla essence to the coconut oil. Quickly stir until fully combined andsmooth.
Drop a teaspoon of the chocolate mixture into each section of a silicone mould or ice cube tray. Place one or two raspberries on top of each dollop of chocolate, then top with another spoonful of chocolate to cover the raspberries.
Place the chocolates into the freezer for 10-15 minutes until set. If you're short on freezer space, you can set them in the fridge instead, though they may take a little longer to completely set.
Pop the chocolates out of the mould and serve immediately, or storein the fridge until ready to serve.
If you have any leftover chocolate mixture you can pour it into another silicone mould or make a small batch of my fruit and nut chocolate bark to use it up.

Hello, I've just made these but with dry cranberries and they are lovely. I'm just wondering how long the chocolates will last when made with fresh raspberries?Reply

Hello, I'm so glad you enjoyed them, great idea to use dried fruit! Made with fresh raspberries, they should last a couple of days at least stored in the fridge, it really depends on how fresh your raspberries are though.
