If you’ve been on this site before, you know that we not only love Comfort Food Recipes, we love EASY Comfort Food Recipes. So, if we can find a shortcut, we will take it! And there is no better shortcut than using Bisquick in our recipes. We’ve made just about EVERYTHING with Bisquick. From Sausage Balls and Chicken Fingers to Garlic Cheddar Biscuits and Impossible Cheeseburger Pie, we’ve definitely made some tasty creations with this handy baking mix.
But where Bisquick can really shine is making desserts and other sweet treats. Recently, we made an Apple Cobbler with it and it was awesome! So, today we are gonna keep our sweet tooth happy and share a recipe for Bisquick Coffee Cake!
Why Do They Call It Coffee Cake?
It’s funny, the first time I offered a piece of coffee cake to my son (a notorious picky eater), he was like “yuck, I don’t want any cake that is made out of coffee”. Obviously, if you didn’t know, usually coffee cake DOES NOT have any coffee in it. The name originates from the fact that it is often served with coffee. But it would taste delicious with any drink!
Bisquick Coffee Cake Recipe
I’ve always LOVED Coffee Cake. Butter, sugar and cinnamon are all baked together into a moist breakfast treat that will get your day started off right! Now, by using Bisquick, you can make your own version of this classic coffee cake in just a couple minutes and by using ingredients that you probably already have sitting in you kitchen right now! All you’ll really need to do is mix together the Bisquick layer and then prepare the streusel topping to go on top! For step-by-step instructions, check out the recipe card below. But here’s what you’ll need to get started:
COFFEE CAKE INGREDIENTS:
- 2 cups Bisquick baking mix
- 2 tablespoons white sugar
- 2/3 cup milk
- 1 egg
- 1 teaspoon vanilla
STREUSEL INGREDIENTS:
- 1/3 cup Bisquick baking mix
- 1/3 cup brown sugar
- 1 teaspoon ground cinnamon
- 2 tablespoons cold butter
Storing Your Coffee Cake
Once you’ve made your Bisquick Coffee cake, what is the best way to store it? You don’t NEED to refrigerate this recipe but it will probably last a bit longer if you do. At room temperature, this Coffee Cake should be good for about 3-5 days. But if you put it in the fridge, you’re probably can extend it’s lifespan to closer to a week.
Can you freeze coffee cake? Yep! You sure can! Just wrap it in freezer wrap, a freezer bag or both and it should be good in your freezer for up to 3 months. I like to freeze mine in individual pieces so that I can just take out what I need to thaw as I need it.
Notes, Tips and Variations
- Easily make this an Apple Coffee Cake by peeling and slicing up a tart green apple. Fold it into the batter before baking.
- You can also add Fresh Blueberries to make this a Blueberry Coffee Cake! If you are looking for another Blueberry Breakfast Treat, check out this Blueberry Breakfast Casserole!
- Add Nuts for some more flavor and texture! Putting some chopped pecans, walnuts or almonds into the crust on top would be delicious!
- Make sure to let this Bisquick Coffee Cake cool before trying to slice it!
- But! When serving, it’s best served a little warm! So put the coffee cake in the microwave for about 15 seconds!
- Watch out and make sure that you don’t over bake this recipe! It can get dry very quickly!
- Serve topped with Whipped Cream. Or, make your own sugar icing and drizzle it over the Coffee Cake once it has cooled.

Ingredients
CAKE INGREDIENTS:
- 2 cups Bisquick baking mix
- 2 tablespoons white sugar
- 2/3 cup milk
- 1 egg
- 1 teaspoon vanilla
TOPPING INGREDIENTS
- 1/3 cup Bisquick baking mix
- 1/3 cup brown sugar
- 1 teaspoon ground cinnamon
- 2 tablespoons cold butter
Instructions
Preheat oven to 375 and grease an 8x8 square pan with nonstick cooking spray and set aside.
In a mixing bowl, combine 2 cups Bisquick, white sugar and mix well.
Add milk, egg and vanilla and mix.
Pour into prepared pan.
In a medium bowl, combine 1/3 cup Bisquick, brown sugar, cinnamon and butter.
Use a pastry blender or two forks to combine ingredients and mash butter into small crumbs.
Sprinkle on top of cake.
Bake for 18-20 minutes or until toothpick inserted in the center comes out clean. Cool until warm and serve.

Hello Elena. I’m not sure I understand your question. Are you wondering how long the coffee cake will stay good in the fridge? I say in the post that it should be good for about a week in the refrigerator. Hope that answers your question!

One of our family go-to recipes, especially for pot luck breakfasts and brunches. We get 12 servings out of a 9″ round cake pan. Our only complaint is that the streusel isn’t quite thick enough, so we double it and do the rest of the recipe just as described above. Perfect with a warm beverage!Reply

If a person wanted to add thawed frozen fruit to this, how would they do it? I love rhubarb and wanted to try adding some to this recipe. Thanks for any help offered.❤️

We haven’t tried that. I know that if I add thawed frozen fruit to any baked item, I always try to make sure I pat it with a paper towel to get the moisture out, and then maybe coat it in flour so that it doesn’t drop while baking. Let us know how it turns out!
